There are a few other examples of uncountable nouns that are often used in countable form in modern usage
Sugar is another for example (And yes a cheated with bread and soap) - but there are many examples that remain uncountable - eg. Electricity

@Neil You can't count breads, you can count slices or loaves of bread. You can have two cups of coffee or two grains of coffee, but not two coffees.

I'm afraid I've got to side with Neil, it's completely normal to order 'two coffees' or 'two waters' in a restaurant so that's misleading.

@Tom - To count or quantify an uncountable noun we use a unit of measurement - a measure word. For example, we cannot usually say “two coffees” because “coffee” is uncountable. So, if we want to specify a quantity of coffee we use a measure word such as “cup” or “teaspoon” in a structure like “two cups of coffee” or “two teaspoons of coffee”. This is a partitive structure.

Whether or not they are being strictly grammatically correct when they do so, people do use all four 'uncountable' nouns in countable forms, with coffee being the most obvious one, so that is a poor category whatever you might want to argue!
